Grilled haloumi is always perfect but the addition of a few herbs and spices in this dish makes it unforgettable.

Combine the cheese with a super-slaw of fresh salad ingredients, yoghurt, lime juice and fresh coriander, and you’ve got a winning combination for a light summer meal.

This dish serves four people for lunch or dinner, or you could serve it in buns with a few fries or wedges on the side and you’d easily feed eight. Leftover slaw and cheese keeps well in the fridge for a couple of days.


Serves 4

For the haloumi:

  • 1 tbsp Grampians Olive Co. olive oil
  • 1 tbsp chopped fresh coriander
  • 1 tsp ground cumin
  • 1 tsp ground turmeric
  • juice and zest of 1 lime
  • 1 clove garlic, minced
  • 200g Symonds Organic Haloumi

For the slaw:

  • juice and zest of 1 lime
  • 4 tablespoons plain Mungalli Organic Yoghurt or Gaga Coconut Yoghurt
  • 3 tablespoons chopped fresh coriander
  • 100g green beans
  • One quarter of a small green cabbage, finely sliced
  • 200g cocktail, grape or cherry tomatoes, halved
  • Corn from two corn cobs
  • Half a red onion, finely sliced
  • Optional: a long red chilli, finely sliced


  1. Top and tail the green beans and boil or steam them for 5 minutes. Set aside to cool.
  2. Mix the oil, garlic, coriander and spices for the haloumi in a medium bowl.
  3. Slice the haloumi thinly. You’ll get 20-24 slices widthways from the Symonds Organic Haloumi.
  4. Add the slices to the marinade and coat on both sides. It’s easier to turn them with your hands to avoid breaking them.
  5. Mix the yogurt, lime juice, coriander and a pinch of salt and pepper.
  6. Add the sliced cabbage and combine to ensure all the cabbage is coated. Add the rest of the salad ingredients and combine.
  7. In a large frying pan on a medium heat, grill the haloumi in batches for one minute each side.
  8. Use tongs to plate a generous amount of super-slaw and top with pieces of the sliced haloumi. Or serve in rolls with a side of fries or wedges.
