Manly Food Co-op is now stocking certified organic coconut milk powder. Here are a couple of recipes that are great for camping on bush-walks, bike rides or kayaking trips – very lightweight to carry and they only need water to be added before cooking. 

All ingredients can be found at your Manly Food Co-op. Some of the dry ingredients can be replaced with their fresh equivalent for a home meal.

Chia Mango Pudding

1 tbsp chia seeds per person. 

½ mango cheek per person

1 tbsp coconut milk powder per person

Mix dry ingredient at home. 

The whole hydration process can take up to 2 hours. Cover with 125 ml of water (adjust if preparing for more than one person) and mix well. Let sit until chia seeds have absorbed water. Mix and check if more water needs to be added depending on how soft you like your chia seeds. You can add sugar but mangoes will provide sweetness as well.

At home you can add fresh fruits.

Red Lentil Dahl

225g red lentils

4 sun-dried tomatoes thinly chopped

50g coconut milk powder

½ tsp chilli powder of 2 dried chillies

¼ tsp ground turmeric

½ tsp ground cumin

½ tsp ground coriander

1 tbsp onion powder

Mix all ingredients together at home. 

Add 750 ml (3 cups) of water and bring to the boil. Simmer and cook stirring occasionally and adding water if necessary until lentils are cooked.

At home, you can substitute coconut milk powder with a can of coconut milk (use only 2 cups of water then) and sun-dried tomatoes with fresh tomatoes. Fresh veggies such as kale, zucchini, broccoli or broccolini can be added at the end of cooking.
