Coco nana chia pots are one of Zing Fresh’s most popular dessert canapés.
Ingredients for Chia Pots
1 cup coconut milk (can use cow, almond, oat etc etc milk)
1/4 cup / 50 g white chia seeds
1 banana (medium ripeness so yellow not brown or green)
Options: when avoiding sugar, spicing things up a little can help keep those taste buds of yours amused. I find the gentle sweetness of banana quite nice but you could try:
1.5 teaspoons matcha powder
0.5 teaspoon cinnamon with either 0.5 tsp of ground cardamom or fresh ginger or turmeric (which of course yields a golden tinge)
0.25 teaspoon rosewater or orange blossom water
Blend all ingredients until smooth. Pour into small jars (I use 5 cm deep & 3 cm diameter but you can use whatever jars you have. Lidded jars make for great individual size & storage friendly serves. Conversely, you can spoon into bowls, apportioning according to appetite. Allow to sit for 1.5 hours before serving. That’s it! Well, after garnishing of course…..
Garnish for Your Chia Pots
- slices of fresh banana, dried banana finger and / or sprinkle or smother with toasted shredded coconut or toasted coconut flakes
- sprinkle with matcha powder, beetroot powder, any spices as above… choices are endless
- If using orange blossom water, top with either a fresh or dehydrated slice of orange or a sprinkle of ginger glow tea. If using rosewater, sprinkle with rose petals or hibiscus powder or goji berries
Covered, these small pudding treats keep well for longer than you can resist them!
Serves 2, 4 or 6 depending on your portion size.
This simple, scrumptious, sugar free treat is as cheap as banana chips to eat. Max $4.50 for this recipe, even if you double up on spice or garnish. They are only small serves after all but that’s what Feb Fast is all about – getting in tune with your hunger again. Eating when you are actually hungry rather over doing it for the sake of being social. Once you start cutting down or out sugar, your taste adjusts and the intrigue of spice based treats with natural sweetness in small doses are satisfying in more ways than one.
