The Co-Op Christmas Party last Wednesday was a wonderful night filled with home-made treats, great conversations and a celebration of 2018.

On Wednesday night we celebrated over a glass of wine and enjoyed European Christmas Cookies, snacks, dips – all over the beautiful music played by the lovely Samir.
It was fantastic to see everyone who could attend and to spread the Christmas cheer around.
If you enjoyed the treats at our Christmas party, you can easily make them yourself. These blended pastes store well in the fridge in an airtight jar and they’ll keep for at least a week, provided you don’t avoid the lemon juice and salt.

Indian Yoghurt mix

  • 1 bunch mint
  • 1 bunch coriander (stalks and leaves)
  • 2 green chillies
  • 4 tsp cumin seeds
  • Juice of 1 lemon
  • 0.5-1 tsp salt

Chop coriander first. Add the rest of the ingredients and blend to a paste, adding the lemon juice and salt at the end. Store in a jar and mix when required with (dairy or vegan) yoghurt

Guacamole mix

  • 1 Bunch Coriander (stalks and leaves)
  • 100g onion
  • 2 chillis
  • 1 garlic clove
  • 1 tomato
  • Juice of 1 lemon
  • 0.5 – 1tsp salt

Chop coriander first. Add the rest of the ingredients and blend to a paste, adding the lemon juice and salt at the end. Store in a jar and mix as required with mashed ripe avocados.

  • Chopped onion
  • Besan flour
  • Cumin Seeds
  • Chilli powder
  • Salt
  • Sugar
  • Asafoetida (Indian spice)

Mix all the ingredients together to make an oniony paste. Shape into patties, 2-3cm by 1cm. Deep fry at medium high heat until golden brown. Serve by itself, with mango chutney or with the Indian Yoghurt mix or even the guacamole!
